Last night I was inspired to create a new dessert – one which was diabetic friendly and also gluten free for me. The end result, was a sea of apple beneath what looked like a white fluffy cloud – hence Apple Cloud. This is very easy to make and prepare so enjoy the experience of my “Apple Cloud”.
- 3 medium cooking apples (I used Granny Smith)
- 1 Tbsp sugar
- 2 Tbsp water
- 1 egg white
- 2 Tbsp sugar extra
Preheat the oven to 180 C in a fan forced oven or 200 C for a regular oven.
Prepare the apples by peeling, quartering and removing the core. Slice the apples thinly and place in a microwave proof dish. Sprinkle with 1 Tbsp sugar and the water. Cover in plastic wrap, leaving a small gap for the steam to escape.
Microwave on high for 6 minutes. Remove from microwave and mix well to form a puree of apple. Spoon into 3 small ramekins and set aside.
Add the egg white to a small electric mixing bowl and beat on high speed until soft peaks form. Add 1 Tbsp sugar and continue beating until sugar has dissolved, then add the remaining sugar and repeat.
Spoon the meringue mix onto the apple using two spoons and create soft peaks. Place on a baking tray and bake in preheated oven for 8 minutes.
