Gluten Free Sweet & Sour Pork

This is so simple to prepare, it’s a dish for a weeknight for sure. Since most prepared marinades are off limits for us, make your own!! You need a can of pineapple chunks, brown sugar, apple cider vinegar, a few strips of a bell pepper, scallion and of course the Pork ( or even Chicken if you prefer).

Hint: For times when you need some bell pepper for a dish or even a garnish, here’s a tip: clean a pepper, discard all membrane & seeds, then cut it into long strips, say 1 inch wide. Then put them all in a Zip-lock bag in the freezer! Whenever you need some, it’s right there. (Great in a Western Omelet too!)

Several Pork Chops, thin sliced, then cut into strips 1 can Pineapple Chunks. Don’t drain yet. We need some juice. ¼ cup Bell Pepper, red, orange, yellow, your choice. Diced. ¼ cup Diced Scallion. Only use the bulb & light green section. ½ cup Light Brown Sugar 2 tbl Apple Cider Vinegar 1/3 cup Juice from pineapple can. Maybe more if needed later. Salt & Pepper to taste 2 tbl Extra Virgin Olive Oil.

Directions; Slice the meat into strips, set aside. Dice the Pepper & Scallion. Set aside.

In a bowl, mix all of the other ingredients. Stir to dissolve the sugar. Place the meat, pineapple chunks, pepper & onion into this and allow to marinade for 20-30 minutes. If it seems to thick, add some additional juice.

When the time for marinating has passed, take a non-stick fry pan or skillet, and add the oil. When the oil is warm, put the entire contents; meat, chunks of pineapple, veggies in and saute. Let the pineapple get a golden color on its sides and turn the meat after about 2 minutes. This is a fast cooking dish; after all the Pork is sliced thinly to start with. Cook everything for approx. 5 minutes total. Remove to a plate and set aside; pour the marinating sauce into the empty pan. Cook for a minute or two, you’ll see it thicken so do this on a low heat. The sauce you’re finding in the pan will be great poured over the meat when you serve the dish. Great served with your favorite Rice; white, jasmine, brown, whatever you love.
