Gluten Free Tuscan Sausage Soup

Warm soup on a cold evening really hit’s the spot! Here’s an Italian favorite: with Italian Sweet Sausage, Yukon Gold Potatoes, Spinach (or Kale if you prefer), and a couple of spices you already have on hand…boom. You’re set.

3 tbl Extra Virgin Olive Oil. I like “Light” blend. 1 lb. Italian Sweet Sausage, Gluten Free of course. Remove from casings. Break apart. 1 cup Chopped Yellow Onion, like a Vidalia ( Sweet) 3 Garlic Cloves, minced 1 -14 ounce can Chicken Broth. Gluten Free again. 14 oz. of water. (Use the empty broth can & fill with the water. No measuring cup needed.) 1 -8 oz, can Tomato Sauce. This is a plain sauce, found everywhere. 3 or 4 Yukon Gold Potatoes. Peel, chop to small oieces, about ½ inch size. Italian Spices. They sell a bottle of Italian Seasonings, or use dried Basil, Oregano, Thyme. Combine all to result in ½ teas. Total Salt & Pepper to taste 2 cups Spinach or Kale or even Chard. Washed, chopped to 3 in. pieces. Fresh Parsley to garnish at end.

In soup-pot, heat the oil and then brown the Sausage that you’ve removed from the casings, and broken apart into bits, about 1 inch in size. Use medium-low heat. Stir around as it browns. This takes only a couple of minutes.

Remove to a plate. In the same oil, saute the onion first. When translucent, ad the garlic and saute until fragrant. Don’t allow to brown.

Add the Spinach and simmer for only 2 minutes additional. Shut heat. Plate your soup and garnish with a few bits of Parsley Flakes. Grab a few gluten free rolls or toasted bread, all set for dipping into the hot soup! Feel free to sprinkle some grated Italian cheese on top too!
