Here’s a side dish that couldn’t be easier and it‘s so healthy for you too: Roasted Cauliflower with Apple. Of course, it’s Gluten Free!!
If you are able, use a dark pan that’s oven-proof, since you’ll get the result of a nice coating and richer carmelization to the veggies you roast.
This is fast…just 25-30 minutes and you’re ready to go. The apples dissolve away but leave a terrific flavor behind. Preheat oven to 415-420 degrees.
Ingredients:
- 1 Cauliflower head, washed, dried, greens removed . Cut into pieces of about 2 inches in size.
- 2 Granny Smith Apples- peeled, seeded and cut into cubes, about 1 ½ in.
- 4 tbls Extra Virgin Olive Oil
- Salt & pepper to taste
- 2 tbl fresh Parsley, chopped
- 1 tbl fresh Lemon Juice
Directions:
After cutting up the cauliflower, wash well and dry well.
Peel and core the apple, followed by cutting up.
Take that dark pan, (hopefully you have one) and in place the oil, salt & pepper, and lemon juice. Combine with a spatula.
Place the cauliflower and apples in and toss well to coat all sides.
Place in middle of oven, uncovered and roast at 415-420 degrees. Roast for 15 minutes and then take pan out and turn veggy to give the underside a rotation. Re-place pan and cook another 10 minutes or so. Total time will be 25-30 minutes. Sprinkle the parsley flakes on top.
