Apple Crumb Pie

When there isn’t time to be rolling out a pie crust, how about this easy and fast dessert?  As one on the “semi-Homemade” recipes I’ve promised, here’s one for the apple pie lovers.

Ingredients:

  • 1 Namaste Foods (Gluten-Free of course) “Biscuits, Piecrusts & More” Mix
  • Ingredients they require: ½ c. oil, butter, margarine or shortening
  • 4-6 Tbsp Water
  • Approx. 6 or 7 Apples: Macintosh, Granny Smith, Macoun, Rome, etc. I’ve always found that a really good pie results from a combination of a couple of types. Use whichever you like. But NO Delicoius Apples. They aren’t for pie baking.
  • ½ c. Granulated Sugar. ( I prefer Organic pure cane sugar)
    ¾ teas Cinnamon
  • ¼ teas Ground Nutmeg
  • 1/8 teas Allspice
  • Dash Salt
  • 1 tbsp Lemon juice
  • 3 tbsp Flour ( Bob’s Red Mill All Purpose baking flour is fine, or your blend of All Purpose flours)
  • 2 tbsp. Butter ( or Substitute if you’re going dairy-free)

My pie is a small one baked for serving 3 people. The ceramic pan measures 6 ½ in. in diameter, so I halved this recipe. But if your objective is to prepare a regular sized pie, then use ingredients above.

Prepare the Namaste mix as directed on the bag. Reserve ½ to ¾ cup of the mixture for later to use on the topping. If the mixture feels too dry add a teas. more water, but don’t let it become soggy. Go slowly with the water additions!

Press the mixed crust into the bottom of a pie pan which was either greased with shortening or sprayed with Pam ( Gluten-free). You must use your fingertips to press into the bottom and up the sides of the pan.

Filling:

In a separate bowl you’ve cored, peeled and thinly sliced the apples.

Add the lemon juice and toss to coat well.

Combine the sugar, flour, and spices in another bowl and then toss with the apples to combine well.

Place apple mixture into that prepared pie crust, making sure to layer apples hoping to eliminate gaps. (Don’t stress, you’ll have a gap somewhere, anyway)

Cut the butter into a few pieces and dot the top of the apples here and there.

Crumb Topping

Ingredients:

  • That reserved Namaste Pie crust we saved for now.
  • ½ cup Light Brown Sugar ( I use Organic Lt. Brown Sugar, but reg. works fine too)
  • ½ teas Cinnamon
  • 1 tbsp melted Butter or your choice of shortening.

Combine all and using a pastry blender or just a fork, mix until it resembles “crumbs”. (You know, some are larger than others.)

Sprinkle over the apples.

Bake at 400 degrees until crumbs are golden. This may take 45 minutes, depending on the accuracy of the oven. Keep an eye on this so as not to burn. If you stick a pointed knife into the pie from the top, you can feel if the apples are soft.

My mini pie pictured here took 35 minutes, but of course it is smaller.

Set on rack to cool. If you’re really a sweet-tooth kinda person, you can dust with powdered sugar when cool. Don’t do when hot or the sugar will melt!
