Gluten Free Apple-Spice Cupcakes with Cream Cheese Frosting! A Semi-Homemade Recipe

Lots to do, little time? Here’s a Semi-Homemade dessert you can dress up in fancy paper holders with decorative party-picks on top…or prepare in a simple muffin tin and serve tonight to the family.

Ingredients:

Namaste’s G-Free Spice Cake Mix ( makes a 2 layer cake or 24 cupcakes) Namaste’s Ingredients needed: 3 eggs, 2/3 cup Veg Oil, ¾ c. Water

2 Apples, peeled and cored, then sliced in chunks of about ½ in. in size. Do not use Delicious Apples, but most crisp, baking apples are fine.

Icing Ingredients:

8 Oz. Sweet Butter , room temp.( 1 stick) or equal am’t of your substitute if going dairy free) 1 pkg ( 8 ounces) cream cheese at room temp. ( or again, substitute) 3 ¾ cups Confectioners’ Sugar, sifted! 2 teas. Pure Vanilla Extract

Directions:  Preheat oven to 350 degrees.

Using the ingredients they require on the mix, prepare the Spice Cake. After beating, fold in the 2 chopped apples and combine, folding through.

Using paper liners in the tins, or a well greased muffin tin, fill to a little more than ¾ full. Bake as directed in a 350 degree oven for time specified on the mix. Test for doneness with toothpick. (If it comes out dry, they’re done)

Icing Directions:

Place cream cheese and butter in large bowl or mixer bowl. Blend with beaters on low until combined.

Add the Confectioners’ Sugar a little at a time, beating after each addition. Beat until well incorporated. If you feel it’s too thin or loose, add a small amount more of the sugar, again beating after each addition. I found this amount was fine, & didn’t need more, but you adjust yours until it’s creamy and spread able.

Add the Vanilla and increase speed to medium, blending until fluffy, about 1 minute more.

Use a pastry bag with the tip you desire to use and fill with some frosting. If you don’t have a store-bought bag, make 1 yourself with a small plastic baggie, like a Ziplok bag you use for storing cookies and small leftovers. Just cut the tip of 1 corner off, but only a small tip.

Fill as you go, and ice the tops completely, or as I did, make a design in the center. The Cream Cheese icing is rich! Enjoy even on a very busy day!!
